SCD Pizza Calzone

Alex and I were again challenged by his consumer ed class to create this new recipe. Unfortunately SCD dough doesn’t have the elasticity of gluten so we had to take a lesson from the Fat Head (cheese based dough) recipes out there.

Dough
  1. 2 cups Monterey Jack Cheese, shredded
  2. 1/3 cup Almond Flour
  3. pinch of oregano
  4. pinch of garlic powder
Filling
  1. 1/4 cup Marinara Sauce
  2. 1/2 cup Havarti Cheese, shredded
Instructions
  1. 1. Preheat oven to 350 F.
  2. 2. Shred your cheeses into separate glass bowls.
  3. 3. Place the Monterey Jack cheese into microwave for 1 minute. Remove and add almond flour. Stir until smooth.
  4. 4. Place dough in between 2 sheets of parchment paper. Roll out and cut in half.
  5. 5. Add your fillings. We used marinara sauce and Havarti cheese. If you want more thickness, add meat and/or veggies.
  6. 6. Fold dough over and pinch or crimp edges with a fork. Sprinkle tops with oregano and garlic.
  7. 7. Bake for 15 minutes. Cool slightly and ENJOY!
Additional Filling Ingredients
  1. Fresh Spinach
  2. SCD Sausage, cooked
  3. Mushrooms, sliced
  4. Bell Peppers, sliced
  5. *Disregard calorie count as the calculator does not consider 'shredded cheese' different from a solid 8 oz. block!

Dough has been rolled out, divided and toppings added.

 

 Fold dough over toppings and crimp edges with fork. Put the oregano and garlic powder on top. 

 

Bake for 15 minutes and enjoy!

These are great for lunches or snacks on the go. I recommend filling with lots of veggies to make them nice and thick. We went with plain fillings: cheese and sauce. Next time we will add in more.
