These are fun and easy to make and oh! so festive! I love this mini heart mold because Valentine’s Day is another holiday that SCDers need something extra special because they can’t indulge in the regular chocolates and candy. And it might just be one of MY favorite holidays! LOVE! We use Great Lakes Unflavored Porcine Gelatin and it’s completely flavorless in this recipe.

Ingredients
  1. 1/4 cup Fresh Raspberries
  2. 3 T Great Lakes Gelatin
  3. 1/3 cup Lemon Juice
  4. 3 T Honey
Instructions
  1. 1. Press raspberries through fine mesh sieve. Collect 2 teaspoons of juice. Set aside.
  2. 2. Whisk lemon juice, honey and gelatin in a small sauce pan until smooth.
  3. 3. Turn heat on to low. Stir until smooth.
  4. 4. Add in raspberry juice.
  5. 5. Pour into silicon mold (we used hearts here or you can use gummy bear shape).
  6. 6. Place in freezer for 10 minutes.
  7. 7. Remove from freezer and pop out of mold. Store in refrigerator. ENJOY!

Ingredients
  1. 1 cup Welch's 100% Grape Juice
  2. 3 cups Water
  3. 2 T. Honey
  4. 1/4 teas. Salt
  5. 1/4 teas. Baking Soda
Instructions
  1. Heat up the water in saucepan and add the honey, salt and soda. Stir until dissolved.
  2. Add grape juice.
  3. Store in refrigerator for a couple days. We like to drink over ice and with a straw! Little things make a difference 🙂

SCD or Paleo Monkey Bread

Alex and I had to invent some SCD Monkey Bread for his Consumer Science course.  Thanks Mrs. K for inspiring a new recipe! This is a great weekend breakfast treat.  I highly suggest using a bread tin because a round cake pan (like most Monkey Bread recipes recommend) leaves too much dough on the inside to not get cooked through.  Let us know what you think!

Ingredients
  1. 2 cups Almond Flour
  2. 1/4 teas. Salt
  3. 1/2 teas. Baking Soda
  4. 4 T. Butter, melted
  5. 1/4 cup Honey
  6. 1 Egg
  7. 1/2 teas. Apple Cider Vinegar
  8. Topping
  9. 1 T. Cinnamon
  10. 1 T. Coconut Flour
  11. 3 T. Butter, melted
Instructions
  1. Preheat oven to 350 F and butter the inside of a bread pan.
  2. Mix the flour, salt and baking soda in a medium bowl. Add the wet ingredients and mix until combined.
  3. Mix the cinnamon and coconut flour in a small bowl. Take spoonfuls of the batter and roll gently in the cinnamon mixture. Place in greased pan.
  4. Pour 3 T. of melted butter over the dough balls.
  5. Bake 25-30 minutes or until bread in middle of pan an have a toothpick come out clean.
  6. Cool for 5 minutes, serve warm and enjoy!
Notes
  1. For Paleo version sub maple syrup for honey. Coconut oil or Ghee can be subbed for butter as well.
